INGREDIENTS
2 large sweet potatoes, peeled
1 tablespoon olive or canola oil
1 teaspoon cayenne pepper
2 teaspoon paprika
½ teaspoon salt
INSTRUCTIONS
Preheat the oven to 400°F. Slice the potatoes in half lengthwise and then cut each half into four wedges. Toss the wedges with the oil, cayenne pepper, paprika (or cinnamon, see Note below) and salt, and lay the pieces on a baking sheet lined with tin foil.
Bake for 35 to 45 minutes until they are browned on the outside and tender all the way through. Check them at about 20 minutes and move them around a little with a spatula so all sides get browned.
Note: If you don’t like cayenne or paprika, try these with a little cinnamon instead. But if you’ve got a little one that likes those Flaming Hot Cheetos (blech!) – they may dig these and they are a much better bet from a nutrition standpoint!
