STUFFED PEPPERS

INGREDIENTS

  • 1 lb uncooked ground chuck (or ground turkey or venison)

  • 1 egg, beaten

  • ½ cup instant rice , cooked brown or wild rice

  • 1 medium onion, chopped1

  • 15 oz can tomato sauce divided, plus ½ cup ketchup

  • 1 tbsp Worcestershire sauce (optional)

  • salt and pepper to taste

  • 3 large peppers cut in half, lengthwise

  • 1/3 cup water

 

INSTRUCTIONS

Mix together ground chuck (or turkey), rice, egg, onion, ½ cup tomato sauce, ketchup, Worcestershire sauce, salt and pepper. Fill peppers with meat mixture and place in baking dish. Mix together remaining tomato sauce and water. Pour over green peppers. Cover with a tight fitting lid or plastic wrap.  Cook for 20 minutes in 350 degree oven until meat is no longer pink and peppers are tender. This recipe will freeze and reheat nicely.
