INGREDIENTS
1 cup Wild Rice
4 cups chicken broth (choose low-sodium, if available)
3 tbsp. grated orange rind
2 tbsp. frozen orange juice concentrate, thawed
INSTRUCTIONS
Cook the wild rice in the chicken broth. Stir in the grated orange rind and thawed orange juice concentrate. Toss and serve hot.
Variation: Cut oranges in half through the middle Scoop out pulp. Chop leftover orange sections into pieces and mix into rice and place into empty orange shells. Heat just until rice is warmed. This dish is pretty served on individual plates or placed around venison roasts, whole turkeys or roasted chicken or ducks.
