EGG-IN-A-HOLE

INGREDIENTS

• 1 slice of your favorite kind of bread or bell pepper*

• 1 teaspoon butter (can substitute w/ vegetable or olive oil)

• 1 egg

• Salt and pepper (optional)

 

INSTRUCTIONS

Melt butter in skillet over medium-low heat. Use a biscuit cutter or rim of a cup to press a hole in the center of the slice of bread. Place bread slice in the skillet and crack the egg straight into the center of the hole.

Cook until bottom holds together and corners are browned, 2 to 3 minutes. Flip and cook until desired doneness is reached, 2 to 3 minutes more.  Season with salt and black pepper, if desired.

*Variation: Replace bread nest with sweet bell peppers for a colorful, veggie forward twist! Clean and de-seed pepper and slice off  ½ inch ring. Place ring in skillet and crack egg directly into ring. Follow remaining directions, as described above.
